Everything here comes out of a working kitchen, not a test kitchen. Heath spent years on steakhouse lines before founding Fresh The Juice Bar — a storefront in Issaquah, a stand at the Issaquah Farmers Market, and a café on the Microsoft campus — and ran it for the better part of a decade.
That means the recipes are built the way a cook builds them: around technique you can reuse, timing that holds up when you are making six of something, and substitutions that actually work.
